FINAL ASSIGNMENT PROGRESS

KELANTAN DESSERT


Kelantan famous with variety kind of desserts. Usually the dessert from Kelantan taste is milky and sweet because most of dessert from Kelantan using sugar and coconut milk in their ingredients. Here are some of famous, milky and sweet desserts from Kelantan…. ENJOY!!!!!

KUIH SERI MUKA

Seri Muka is a two-layered dessert with steamed glutinous rice forming the bottom half and a green custard layer made with pandan juice (hence the green colour). Coconut milk is a key ingredient in making this kuih. It is used as a substitute for water when cooking the glutinous rice and making the custard layer.




Bottom Layer
250g Glutinous Rice, soaked for 4 hours and drained
170ml Thin Coconut Milk
¼ tsp Salt

Top Layer
2 no. Eggs
150g Castor Sugar
120ml Pandan Water (Blend about 10 pandan leaves with 120ml water)
400ml Coconut Milk
120g All-purpose Flour
3 tbsp Tapioca Flour
¼ tsp salt
Green Colouring (optional)

KUIH JALA MAS

Jala mas cake is a sweet traditional Malay dessert made ​​with egg cooked in sugar water.
Jala mas cake made ​​with yellow eggs that are added into sugar, boiling water.
Kuih jala mas have a design that dangle like tiny noodles. It is usually only available for special celebrations such as engagement, marriage. This is because the process is very fussy and using only egg yolks it make it in high cost. Usually the duck eggs that are used are the one that have larger yolk. In addition, it is usually produced with kuih tahi itik to avoid waste the remaining egg whites.

Jala mas cake is more popular on the east coast, especially in Kelantan and Terengganu . In the past, it is usually reserved for serving the king and the nobility. This is because the costs of expensive and complicated way of producing it. Until now, among ordinary people is limited to special events, especially as a wedding cake at the event, or engagement.

Name mas nets may be taken from a golden yellow colour and shape, such as nets. By tradition, the tradition of the Malay culture, golden yellow colour is reserved for the kings only.

KUIH TAHI ITIK

Kuih tahi itik are widely sold there at a certain season. The ingredients are white egg, coconut milk, and sugar. It is easily produced and the price is reasonable.

Name of duck dung cakes may be based on the appearance of whitish colour of the cake and the shape that are look the duck droppings. In addition it may also result from kuih jala mas production waste because its only use the egg white.

AKOK


Akok cakes are very popular in Kelantan and Terengganu . Akok was originally from Pattani, or the surrounding area that have family relationship with the people of Kelantan. Akok producing processes are not easy and costly, this is because the production process akok require high amount of egg and it is quite hard because it is need to be baked.



Ingredient of akok:
5 egg
200ml coconut milk
100ml water
150 gram brown sugar
30 gram flour
3 pandan leaves
2 pinch of salt

BUNGA TANJUNG


Kuih bunga tanjung were very popular in the state of Kelantan and is one of a special dessert there. It is a cake made ​​with flour and eggs mixed in sugar water.
Kuih bunga tanjung colour is yellow. The process of making kuih bunga tanjung is very fussy and costly because its only use yolk, that’s why it is only will be made to celebrate certain ceremony. It's more special cakes for special functions such as the earned the wedding. White balances of the eggs usually used for making kuih tahi itik.

TEPUNG PELITA

Tepung pelita is a tasty and sweet traditional famous dessert in Kelantan. Kuih tepung pelita is basically flour made ​​from coconut milk and rice flour and cooked in containers made ​​from banana leaves.
Basically, kuih tepung pelita consists of two parts, namely the upper part called head, it is soft and made from coconut milk and have white colour. The bottoms are made from rice flour and are usually colour green. It is one of the hardest dessert to make.

LOMPAT TIKAM

Kuih lompat tikam has two layers, the layers of green colour powder usually at the bottom and a layer of coconut milk and white colour on top. We have to eat it with brown sugar water as a sauce.it will give very tasty, milky, and sweet flavour to the dessert.

PUTERI MANDI

Kuih puteri mandi is very famous cake in Kelantan. It is made from rice flour. Usually it is made in round shape. It is sweet cake and be eaten with coconut that are added with the brown sugar. It is very elastic because it is made from the rice flour.

BUTIR NANGKA

Kuih butir nangka is not related to the jackfruit at all. It is named Butir nangka because the shape is like the jackfruit seeds. It is made from rice flour which is quite similar to kuih puteri mandi but it is not served with sweet coconut but it use coconut milk as its sauce.

CEK MEK MOLEK

Kuih cek mek molek is sweet Kelantan traditional dessert. The shape of cek mek molek is oblong. It is made by sweet potatoes that have been cooked and mashed added with flour, sugar, and salt. Usually there is sugar that placed in the centre of the cake. It is easy to find this cake anywhere in Malaysia. It is suitable to eat at the morning as a breakfast or for the tea time in evening.
